BWF: Youthful comfort

Comfort foods.

What does it mean for you? What is that item you can turn to on a cold winter day? Or a rainy spring day? Or in a time when we’re all shuttered up, at least to an extent?

What’s that one item?

In situations like this, or times like this … it’s easy for me. A peanut butter and jelly sandwich. And why? Because it can bring me back to childhood. A time when things seemed easier and more innocent. The cares in the world weren’t as bad. You didn’t worry about much and this was often the lunch of choice.

That’s the way to be.

Since this whole thing started a few months ago, I’ve had several PB&Js. And I’ve enjoyed each one.

Believe me — there’s a lot I could eat on a day where it’s eat what you want Pizza. Bacon. Steak. Potatoes. Maybe breakfast.

So much.

But I feel if this is something in a time we’re at … this is the way to go. Good preserves. Usually creamy peanut butter. On white bread.

Need some help? Allow me to give you my recipe!

  • Two slices of white bread
  • Creamy peanut butter
  • Strawberry or blueberry preserves
  • A butter knife

Put the two pieces of bread out. Take the knife and load it up with peanut butter. Put that on one slide of bread. Clean off knife on other side of bread. Put the preserves on the other slice of bread. When done, lick the knife clean. Seriously … you don’t do that? Put the two pieces of bread together and take a big bite.

Serve with a cold glass of milk to really make it perfect.

Peanut butter Pop-Tarts? OMG! Do they deliver or flop?

I’m going out of the norm here.

How so, you may ask?

Allow me to go a little Internet/text/etc. on you for a moment.

Like, OMG.

Recently, I saw a commercial about some new Pop-Tarts. I’m not usually a fan of Pop-Tarts because they are crammed full of sugar and such and I try and limit it as best I can.

Peanut butter Pop-Tarts? Can they deliver?

But, OMG!

This commercial showed a new flavor — Gone Nutty Peanut Butter.

WTF? OMG!

OK, enough of the Internet stuff. But, seriously, holy crap. If you’ve been a reader of my blog, you know I love me some peanut butter. It’s something I believe should be in its own food group.

And now Pop-Tarts have peanut butter? Wow. Soon after, though, I forgot all about it. And then it happened.

I was strolling around the aisles of the local dollar store and there they were — sitting on the shelf. They stared back at me. “Buy me!” I couldn’t resist. Even at $2.25.

Letting them sit a day is something I needed to do, though. I had to stare at the package and understand what I was about to undertake.

I would even look past the nutritional information if need be. I mean, heck, what’s 200 calories for one pastry? After all, it’s only 60 calories from fat! And those 36 grams of total carbohydrates? No worries. Only 16 grams were sugar!

You see, there aren’t many things I don’t like with peanut butter. I look the other way if it’s good.

But…

Could this finally be the one that got me?

The next day, I slowly opened the box and pulled out one of the packages of Pop-Tarts. In gold wrapping, it was as if I was Charlie from Willy Wonka and I had just brought the box home to Grandpa Joe and it’s all excitement.

Anyhoo…

So the first one I placed in the toaster and heated it up. When I grabbed it there was so much excitement.

… and anticipation.

Blech.

A golden ticket? Not so much.

And just like that, I found something with peanut butter I just don’t like. Now, don’t get me wrong, it’s not awful. But I had a hard time getting through that first pop-tart. Later, I tried the other one in the package without toasting it — not much better.

There’s just something about a pop-tart pastry with some not-so-great peanut butter inside.

It’s a shame, too. I had really looked forward to this. But I think I finally found something that peanut butter doesn’t go with. That says something, too, as peanut butter pretty much is awesome with everything.

But, in the end, my body probably thanks my taste buds for not liking them too much. I’m sure pounding down boxes of these things couldn’t have been a healthy endeavor, so it’s only two more packages that I’ll have to choke down at some point.

Yes, I will finish them. After all, $2.25 is $2.25.

Foodie Friday: Granola bars

(Foodie Friday will be a semi-regular feature on my blog where I try and expand my cooking knowledge. It might be a meal, a snack, a drink or something else, but it’s something I’ll have created and — hopefully — it will taste good. This feature will share time on the blog with Foto Friday, but there will be no set schedule for either.)

I love granola.

Always have. Even as a kid, I was a fan. Whether it be granola bars or granola on its own, I love it.

Besides being a healthy snack, it’s also quite nice to have when you are out doing things, such as disc golf or geocaching or hiking or whatever. It can be quick and filling and, sometimes, that’s what one needs.

A little thicker than I would like, but the granola bars were a success.

I always figured it would be cool to make my own granola bars. In the end, I figured it would be cheaper than buying the mass-produced ones, and I’d know all the ingredients, which would hopefully, in turn, make things healthier.

That’s why I got excited when I came across my latest attempt at making my own snack — no-bake peanut butter pretzel chocolate chip granola bars. Yeah, it sure is a mouthful to say, but it’s well worth it in the end.

I came across this recipe (snagged from this one) when I was working on the peanut butter bars. I figured if they were both no-bake, I may as well tackle two of them, right?

I didn’t make any major changes to this one as I’m not even sure if there is a sugar-free brown sugar out there. If there is, I would likely try to do that in the future. There could be a change or two I’d make when I do them again, however. I’ll discuss those below.

Again, my idea for these would be to take out and about with me. I’m not sure, as I did them, if this would be feasible. But, with a couple of changes, it easily could change.

This recipe is supposed to yield 10-12 bars, which it did. But they weren’t the size I was hoping. I like granola bars to be like the ones you get at the store — thinner and a little longer. The dish that’s called to be used for this is too deep and the bars are thick.

Anyway, the recipe:

Ingredients:

  • 1/4 cup unsalted butter
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 1/4 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 2 cups quick oats
  • 1/2 cup crispy rice cereal
  • 3/4 cup chopped pretzels
  • 1/4 cup mini chocolate chips (I used regular sized and added some peanut butter ones, too)

Directions

  • Cut out an 8×8 piece of parchment paper and place in the bottom of an 8×8 inch baking pan. Spray lightly with cooking spray. (I didn’t have parchment paper, so just “buttered” up the pan and it worked well).
  • In a large sauce pan, add butter, brown sugar, honey and peanut butter. Heat over medium-low heat, stirring occasionally until the mixture starts to bubble. Once bubbling, cook for 2 minutes while stirring. Remove from heat and stir in the vanilla extract.
  • Stir in the oats, crispy cereal, and pretzels. Stir until well coated. Pour into the prepared pan. Press the mixture evenly into the pan and press firmly with your hands. Sprinkle the mini chocolate chips over the top and gently press into the granola bars with your hands.
  • Place the bars in the refrigerator and let cool for at least 30 minutes before cutting. Cut into bars and serve.

I really did enjoy these bars and still have a few I’m chomping on. But the one issue is the 8×8 pan. Doing these again will require a bigger pan so the bars can be thinner and take the shape of an actual granola bar. I saw the photos on the other websites and either they didn’t use an 8×8 pan, or something went wrong with the recipe on my end because it was thick as can be in the pan.

Something bigger than an 8×8 pan probably makes these a bit better.

The recipe was quite easy to follow and finished quick enough.

The taste is excellent. I really like it. The one problem is leaving them in the refrigerator makes them a little harder. I wonder if it’s necessary to leave them in the fridge after they harden up some? I think I’d like to find a way to cut them all up and store them separately so they can be grabbed on the go a little more. Something tells me they should be able to last for 3-4 weeks, if done right. I could be wrong here, but I’ll have to play around and see.

I also think it might be fun to mess around with the recipe a little, so I might try that down the line, too.

In the end, I’d definitely encourage this recipe. Especially if you have little ones who need snacks. These could even be something they help you make, so it could even taste better. Give it a try!

Quick to make peanut butter bars are an incredible snack

People who know me know I’ve been losing some weight recently.

And that’s a good thing.

I’ve lost a bunch, too. So much that my pants don’t fit me anymore. I can even see it myself, which I usually don’t. But that’s also a good thing. I still have a long way to go, but this is a good start.

Part of this is trying to eat a bit healthier.

Yum!

I don’t snack as much as I used to and I try and limit certain things. Though, I’ll admit, sometimes it’s hard. I also have to watch my sugar for health reasons, so I’m always trying to find something I can snack on that won’t send my blood sugars into the stratosphere.

A few days ago, I saw a post on my friend Chuck’s Facebook page. It was for no-bake peanut butter bars. Again, if you know me, you know what I think about peanut butter. It’s right up there with bacon. And cheese.

Anyway, I got peeking at this recipe and knew I needed to try it. Not that I’ve become Chef Ramsay or anything lately, but I’ve been pretty successful with trying new things in the kitchen. This seemed like something perfect to try.

But as I read the post at this blog about them, I discovered something else — no-bake peanut butter pretzel chocolate chip granola bars.

Yes, please.

When I go out to play disc golf or geocache, having snacks is a must. And this was something I needed to see how good they were and if it’s something I should have on hand more often.

But I’m only going to cover one of these in this post and the other will come sometime next week. First up are the peanut butter bars, which are amazingly good.

The blog which had the peanut butter bars was Six Sisters’ Stuff. There, they acknowledge they adapted the recipe from another blog. I look at both recipes and I like the adapted one a bit more, so I went with it.

However, I needed to give it a spin of my own — as in trying to make it a little less heavy on the sugar. (Too much sugar, after all, makes my levels go nuts… so what can we do… fix it!)

The recipe, from the Six Sisters’ site, is as follows (my changes are in italics):

Ingredients

  • 1 cup margarine melted
  • 2 cups graham cracker crumbs
  • 2 cups confectioners’ sugar (I made a sugar free version of this, using Equal. It wasn’t too bad, though the measurements I found were off and I needed to use much more Equal than originally called for)
  • 1 cup + 4 tablespoons peanut butter
  • 1 1/2 cups milk chocolate chips

Directions

In a medium bowl, mix together the melted butter, graham cracker crumbs, confectioners’ sugar, and 1 cup peanut butter until well blended. Press evenly into the bottom of an ungreased 9×13 inch pan (I don’t think I used a 9X13, but it was close enough). Then, melt the chocolate chips with the peanut butter, stirring every 30 seconds until melted and smooth. Spread over the peanut butter layer and refrigerate for at least one hour before cutting and eating.

This was quite easy to do and it didn’t take too long. I wanted to use sugar free chocolate chips, but the local grocery store didn’t have them. I will make these again and I think I’d look around to try and find those to use.

End result?

Oh. My. God.

Before the chocolate topping is spread all over.

These are fantastic. Quite rich, but if you are a peanut butter fan, well worth it. Keep ’em in the fridge as they taste way better that way. I really like how they came out. And it seems like it’s a bit healthier than some of the other things I like to snack on, so bonus there. I’m really glad Chuck posted this to his Facebook and it’s a recipe that will stay with me, that’s for sure.

I think it might be fun, too, to play with this recipe. Maybe try a different peanut butter. One of the flavored ones, maybe? Or, try something different on the topping with a different type of chips? White chocolate, perhaps? Now that sounds divine.

The best part of this recipe is how easy it is. You don’t have to be some five-star chef to pull it off. Just go at it and have some incredible peanut butter bars as a snack. If you are a peanut butter nut, it’s well worth it.

Peanut butter owns Nutella

The comparison between two spreads...

There aren’t many people I know who share my affinity of peanut butter.

I got it from my mother and father. A gal I used to work with was also a massive fan — and she made the most divine peanut butter cookies. I’ve known a few others here and there, but to love peanut butter to my level, I haven’t seen often.

Peanut butter, you see, is a nectar of the Gods.

It’s up there with beer. Yes, I said it. In fact, you can eat it with a beer. That makes it even better.

(Note: Peanut butter with beer is only recommended if you drink a good beer, not something crappy).

To say I’m a fan or passionate about peanut butter would be a total understatement. In fact, I would likely call it a little more obsessive.

The undisputed winner!

Recently, I have been searching for some new blogs to read. Ones with a personal touch. Ones that would be fun to read and to go back to on a regular basis.

I first stumbled upon Rusty’s blog post about his love fest with Nutella.

Now, allow me to tell you that I have tried Nutella. I don’t hate it. But I don’t love it, either. I didn’t really like it on toast because the hazelnut/chocolate flavor is so overpowering.

And because it’s chocolate-like, I’m sure it would go with beer, even a cheap can of Pabst Blue Ribbon. But who wants to have to choke down a PBR to enjoy Nutella.

Basically, in a sports analogy, Nutella can’t hold peanut butter’s jock.

(Second note: One reason why peanut butter is better — you don’t have to capitalize the p and the b because it’s not an actual brand, like Nutella. Thus, this makes peanut butter less stuck up and more of a “people’s snack.” Though, to be fair, Nutella isn’t capitalized on its containers, but that’s a branding thing, not a grammar thing.)

I didn’t get through Rusty’s post all the way (the first time) because he mentioned his post came based off another blogger — Michael — talking about the glory that is peanut butter.

That, apparently, opened this battle.

Then, Rusty shot back with his Nutella post.

Finally, Michael responded in kind.

They both make valid points, including talking about things like nutritional value. I won’t get into all of that as they have done the work on all of that, so if you want to see that — check out their posts.

Instead, I’ll just discuss why peanut butter is so freakin’ awesome.

You see, peanut butter can go with just about anything. And when I say anything, I mean it. Sure, there are things peanut butter wouldn’t be good on. But there are far more things peanut butter is good on rather than Nutella.

Allow me to count a few things that I would gladly spread peanut butter on:

  • Fruit
  • Bread
  • Veggies
  • Pretzels
  • Cookies
  • Ice cream

I’m sure Nutella could be decent on these things as well, but is it better? Heck no.

Let’s look beyond what peanut butter is good with, too. Let’s look at the overall picture. Peanut butter comes in several different types — such as crunchy, smooth etc.

Then there’s peanut butter-and-jelly. Or peanut butter and honey sandwiches. Oh my. Hello — peanut butter and fluff?

I have even had — more than once — peanut butter and cheddar cheese sandwiches. It’s well worth trying and it’s excellent.

Nutella... it's just not peanut butter.

Nutella is, well, Nutella. It’s boring. It’s the same. Chocolate/hazelnut flavor.

Peanut butter seems to help bring out the taste in other things and stands out well on its own. Nutella? It overpowers other things and doesn’t help bring out other flavors.

I look beyond this, though. I wonder if those who might think Nutella is better than peanut butter suffer from arachibutyrophobia? For those of you who don’t want to Google it, that means the fear of peanut butter sticking to the roof of your mouth.

Fun fact, too: November is “Peanut Butter Lover’s Month.” Last time I checked, there isn’t a “Nutella Lover’s Month.”

And, for those who truly love peanut butter, there is a website set aside just peanut butter lovers set up by Souther Peanut Growers!

The battle

I am a fair guy. At least I like to think I am.

With that in mind, I decided to put peanut butter to the test with Nutella.

I took two slices of bread, spread peanut butter on one and Nutella on the other (see the photo at the top of this post). I first ate the Nutella, figuring a clean palate would be beneficial. The hazelnut taste is strong and Nutella, as I’ve always thought, has an odd after taste.

After some milk, it was time for the peanut butter.

No contest.

The peanut butter was infinitely better. And oh how I loved that it helped rid my mouth of the Nutella taste.

For the record, too, the final quarter of each, I put together. It’s actually not too bad when in a sandwich. But, I think it would need a smaller amount of Nutella to go with it, because it still found a way to overpower the peanut butter.

I hate being in front of the camera, but also realize sometimes it's not the worst thing in the world. So, I'm getting better with it. Week 4's theme was all about us and having us in front of the camera, so I tried to come up with a creative way to do it.
